In 2025, his restaurant El Chato was named the best restaurant in Latin America, and most recently ranked 54th in the extended list of The World&#8217;s 50 Best Restaurants. Clavijo is thus writing a new chapter in Colombian cuisine in Bogot\u00e1, bringing together origin, product and precision in a special way.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">His career began in Paris, where he discovered his passion for cooking and worked his way up from dishwasher. This was followed by stints in Barcelona, again in Paris, in New York and in Copenhagen, including at renowned restaurants such as Per Se, L&#8217;Atelier de Jo\u00ebl Robuchon and Noma. With this international experience, Clavijo returned to Bogot\u00e1 and opened El Chato in 2017, driven by the idea of rethinking the flavors of Colombia and putting them on the culinary map of the world.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The products of his country are at the heart of his cuisine. Clavijo works closely with small producers, constantly exploring new ingredients and developing menus based on season, region and availability. Instead of simply reproducing traditional dishes, he reinterprets Colombian ingredients, memories and flavors in a contemporary way.
