Shortly after opening, the restaurant was awarded a Michelin star and a Michelin Green Star. In 2024, Two Knives was added to The Best Chef Awards, in 2025 OAD named Knystaforsen the best new restaurant in Europe, followed by the Discovery Gem Award at La Liste in 2026.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Before Nicolai Tram founded Knystaforsen, he worked in some of the most exciting kitchens in Europe, including Le Sommelier in Copenhagen, La Terraza del Casino in Madrid and Dragsholm Slot in Denmark. In addition, Jacobsen opened his own restaurant north of Copenhagen. Today, these experiences result in a signature style that does not rely on effects, but on proximity, intuition and the power of the product.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">At the heart of his cuisine is an elementary principle: fire. He cooks exclusively over an open flame, using ingredients from the forest, river, lakes and local producers. Game, freshwater fish, berries, herbs and plants thus become part of a culinary experience that is deeply rooted in its landscape and gains great independence from it. Together with Eva Tram, who curates the wine and non-alcoholic accompaniments, Nicolai Tram creates an overall experience that is as close to nature as it is finely balanced, in which simplicity and excellence come together in a special way.   <\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>In the middle of the forests of southern Sweden, Nicolai and Eva Tram have created Knystaforsen, a place where fire, landscape and product come together directly.
