There, he became acquainted with the Italian \u201cCampanismo\u201d culture, which exclusively uses fresh ingredients from the immediate surroundings.<\/p>\n<p>This philosophy left a lasting impression on him and continues to shape his cuisine today. After four years in Italy, Kobayashi returned to Japan and opened his restaurant \u201cVilla AIDA\u201d in Wakayama Prefecture, where he grew up, in 1998. He calls his concept \u201cAgrigastronomy\u201d \u2013 a cuisine centered around vegetables.<\/p>\n<p>Kanji Kobayashi cultivates most of his ingredients on his own fields and exclusively relies on seasonal products from the region. From these, he creates unique, Italian-inspired dishes that are deeply rooted in his Japanese culture. His creations reflect the natural climate of the region and the seasons, and with every plate, the top chef honors the diverse culinary treasures that nature bestows upon him. Thanks to this concept and its tranquil location an hour south of Osaka, \u201cVilla AIDA\u201d remains a culinary retreat for gourmets to this day.
