He perfected the art of plant-based cooking long before vegan food became an international megatrend. For more than 25 years, former art photographer Nicolas Decloedt has been committed to a vegan and ethical lifestyle. His Michelin-starred restaurant in Brussels, humus x hortense, which he runs with his partner, chef, sommelier and mixologist Caroline Baerten, has won numerous awards and was named best vegan restaurant in the world in 2019. The Belgian is driven by his attention to detail and a dream of ecological perfection. 

His seasonal cuisine is not based on spring, summer, autumn and winter, but on 24 micro-seasons to guarantee the freshest produce. Sustainability and zero waste are also important aspects of his “botanical gastronomy”: the plant products come from regenerative agriculture within a radius of 100 kilometres. From root to leaf, Nicolas Decloedt uses every part of the plant, so there is no waste in his kitchen. Techniques such as fermentation bring out the full flavour of the food. This intense taste experience is enhanced by the wine pairings and botanical cocktails that Caroline Baerten creates to perfectly complement each course. The creative duo’s credo: We shouldn’t need to choose between delicious or sustainable food - both elements can be combined perfectly on the plate.
